Coffee: Seven Seeds / Reuben Hills / Mecca / Small Batch
Passion: 10/10
Crema: 10/10

Having just removed the only 10/10 cafe from my list, I was a little weary giving another one away, but I am finding it exceedingly difficult to fault anything about Paramount. Sure they have only open now for 2 weeks, and the shine will come of eventually, but... wow. Talk about potential for coffee experience. Did you notice that I listed four different roasters? That is because these guys grab a bean, ship it off to the different roasters, and then you get to compare and contrast the different flavours that the roasters can extract from it. AWESOME!

Starting with a pour over served cold from Small Batch Roasters of Melbourne and their Colombian El Descanso, I loved being able to sit at the bar are watch the entire process of the coffee being made from start to finish. The experience was clean and precise.

The coffee was elegant in its simplistic complexity. Simple as in it is a pour over on ice, and complex as the extraction time, weight, measured delivery of water and controlled cooling with ice. It had a heavy aroma of red delicious apples, and a robust yet mellow body. As a cold coffee, much of the expected tart cranberry was hidden, but the aftertaste was smooth and almost chocolatey. As it warmed back to room temperature, much more of the cranberry appeared and the chocolate turned into peanut as I breathed out. Such an awesome experience.

Next up came Mecca with their Colombian El Descartes and it smelled... juicy. Already salivating before drinking I was surprised to not really get a massive whack of anything specific. It was rich, dark, and... requiring a bit more cooling down. As it did, a soft acidity balanced the rich flavour but did leave my tongue feeling dry. All round the experience was much more mellow than the Small Batch.

I am so tempted to just sit here and drink their entire menu but should probably leave something to experience next time. But when you come here, and you should, sit at the coffee bar, ask the barista what they recommended and go for that. Sure, they could make you a latte but.... why....

Great place for meetings - BUT no access to the wifi? Why??? Are you the only cafe in Sydney without access to wifi when 80% of your patrons during the week are using your premises for work. This is really not good :(

Great coffee! And staff are all friendly and hard working in such a busy place! great experience overall !

Chris Marian17.10.2026

The coffee was really good, but its ridiculous that the wifi is reserved for only the hotel guests and no staff would provide us with the password as customers. What coffee shop doesn’t provide wifi?!

pls don’t get the maple iced coffee it’s not good and not worth $7. the atmosphere is nice tho and good to bring ur laptop

This cafe is confusing, when you walk in it seems like you have to order at the counter but it’s actually table service. Also this establishment does not have public wifi..

A good place to enjoy a weekend brunch with your laptop. A peaceful ambience and the food was good.

Great place to have a coffee and work on the computer. No wifi though...

Lovely place to do a bit of work (despite there being no wifi), service was prompt, quite crowded despite it being a weekday afternoon. Coffee was a little more on the robust side.

Excellent coffee ☕️, excellent service and great food 🥗 in a cleverly designed space of the foyer at the Art Deco chic Paramount House Hotel. A slow coffee bar and a working coffee bar adds depth and interest to the space. Melbourne vibes definitely felt here 😁

I’m a frequent visitor of Paramount, even though I don’t live in Sydney. Coffee is great, food is not your standard breakfast. Online downside is that there is no wifi. So if you’re looking for a place to do any bit of work, this probably isn’t the place. But Paramount Coffee Project will continue to be a place I frequent and recommend to visitors of Sydney.

Paramount Coffee Project (PCP) is brimming with the enthusiasm of youth and exceptionally well tasting coffee. You'll do well to see past the man-buns and felt hats and take a look at the menu - packed with hifalutin sounding delights such as baked eggs and crumbed eggs. It's a cafe so there's a cast of extras as long as your arm - think Bacon, Avocado rather than Ricky Gervais - and the rest of that wonderful tome is devoted to coffee and that's always a good thing. Find a spot by the front window and watch the pretty Sydney people drive, walk and fancy pants past the glass as they meander along Commonwealth Street. Hip eatery in an old part of town made new by the currently trending set. I didn't even bother to check if they had wifi - testament to how cool this place really is.

THIS IS MY HONEST REVIEW, ALTHOUGH I AM SURE A-LOT OF PEOPLE HAVE HAD A POSITIVE EXPERIENCE BUT THIS IS MINE.

My friend and I were served by an audacious girl with dyed bright red hair and greasy fake smile. She kept on cutting me off when we were trying to order. I understand it is busy, but to do that multiple times after she was the one to approach us is appalling customer service, and made me question the quality of customer service of the staff. I’m not asking for royal treatment here, I just wanted to enjoy the place and the drinks.

Furthermore, I am aware of the 1.3% surcharge on card, however we ended us being charged a 12% surcharge by the same red headed girl. Our total was suppose to be $14.18 for two iced maple lattes but came to $15.68. I most definitely will be reporting this to the relevant authorities with evidence to support. I am not sure if this is the girl’s doing or something else.

I am aware It is not much money, but I am an hard working (broke) uni student and this was supposed to be a nice treat on a hot day. The overall experience was abysmal. Atmosphere was alright and Iced maple latte tasted blandly okay, but was disappointingly small for its price of 7 dollars.

The vibe is good, staff are great and helpful! I wish the wifi could also be provided to the customers as well

I came here twice, poor service. I ordered green tea, I received black tea. I was okay with the first mix-up, but I ordered breakfast avo on toast it never came...I was there for a good hour, luckily I was working and sipped on my tea to distract me with the time but I had to cancel. When I advised the girl at the cash register all she said was sorry, here is your bill. I even asked if the kitchen received my order ? she said "yes, sorry about that' no explanation and her sorry was as empty as my stomach. I even thought I would again order coffees to go just to support local business but having some to reflect, I didn't feel valued and I don't think I will come back.

Kasey Kaplan17.10.2026

Food was good, but limited menu. Also they don't offer wifi to guests so that's a massive disappointment.

Billy Z17.10.2026

The coffee is the best I had in Australia. The food was delicious. One server was lovely. One was impersonal. The pretentious dudes in the hotel lobby, where the restaurant hostess asked me to wait but where they did not want me to wait, didn't help the overall experience. Get the ham-hock on toast, and you'll almost forget all the millennials and their attitude. Oh, and don't expect to use wifi while you're there. If you're not staying at the hotel above the restaurant, you can't.

Monika Johal17.10.2026

Love the iced matcha from here, have spent many hours sat outside working, perfect spot for it! The scrambled eggs are so good too

Gergely Deák17.10.2026

I was there on a Wednesday morning. Service was great an quick. Latte was delicious, however food was slightly overpriced and average. The biggest downside for me was the lack of wifi, but I guess to meet up with friends it is good choice.
